Ice cream sandwiches are the best! What’s better than ice cream between two cookies? Maybe ice cream between 2 layers of cake, or brownie? I have been preplanning for our camping staycation, and have thought that homemade ice cream sandwiches would be the perfect activity one afternoon for all the kids, then also serve as their dessert that night. Thinking about it, this is what I have come up with…
We will have anywhere from 12-15 kids during our staycation. On some days, keeping them busy is a challenge. Giving them something to do, and having them make their dessert, with their own flavor choices will personalize the experience for them, and give them something to look forward to after “eating a good dinner”!
For the outside part of our homemade ice cream sandwiches, I plan to use the premade chocolate chip cookie dough, but would also like to make either brownies, or chocolate cake. (Thinking brownies might be easier.) We can make the brownies, and cookies that morning, then after they have complete cooled, cut the brownies or match the cookies to size. 12 kids = 24 cookies, or 13×9 in. pan of brownies cut into 12 with each brownie sliced through horizontally.
For the inside, ice cream of course, but a couple of different flavors. None of us have an ice cream maker (wishlist item), so ice cream will be store bought. I guess this could be the hard part, but if we keep the choices to a minimum, it shouldn’t be too hard. Vanilla ice cream is a number one option, for those of us who want to stick with traditional, but also mint chocolate chip, or just chocolate chip ice cream could be a good fit as well. Then again, almost any flavor ice cream could work.
Then for decoration having sprinkles, chopped peanuts, and mini chocolate chips, or candies put out in bowls, or pie pans will give them options (again personalizing it for them). Once they have assembled it, they can roll their homemade ice cream sandwich in one, or more of the decoration choices.
Once they have decorated their ice cream sandwich, we can wrap each one in plastic wrap, and stick a printable name label it – then place them in the freezer until after dinner. That is if they can last that long! LOL!
